It's the most wonderful time of the year.

Or the busiest. And most stressful. I started working as a flight attendant at the beginning of this year. I did training in Montreal for eight weeks in January and February and officially started flying March 3rd. Then, I decided to go back to University in September to finish my Archaeology Undergraduate Degree. 

So, right about now, I am finishing up the semester in university (I have two exams left) and flying on the weekends. But, I'm in the holiday spirit! Cheers!

This past week, I had two three-day pairings in a row. I left Wednesday and had a layover in Ottawa and Vancouver, and got back (late) on Friday night (after delays in San Francisco) and then left early Saturday morning for another layover in Vancouver and then Ottawa, and home early Monday morning. Busy! And for the first time, I tried to cook myself food for every meal that I would be gone. I ended up cooking for about 3 hours on Wednesday before I left (and doing a mound of dishes!!).

I didn't take any photos unfortunately, but it actually went pretty well!! I made a big batch of gluten-free baked mac and cheese with cauliflower and froze a bunch of it. That will last me awhile. I also made a batch of granola and made two servings worth of smoothies for each pairing before I left. Those were great for breakfast! And then filled out the other meals with quinoa, tofu and broccoli, sandwich, leftover stir fry, and veggies and fruit. My lunchbag sure was heavy, though!


We're hosting a Christmas party at my house on the 21st (after my last exam), and since I have been in the cooking mood, I made some peppermint bark, and hope to make some other sweet Christmas treats. Any suggestions?

If you don't know peppermint bark, it is the simplest holiday treat I know how to make. I line a baking sheet or shallow rectangular casserole dish with parchment paper, then crush up some candy canes in a ziploc. After that, using a double-boiler, melt some semi-sweet chocolate and pour it in the dish. Let that refrigerate for a couple hours, then do the same with white chocolate, and spread the crushed up candy canes on top. Let it all cool and then break it up! Simple as that.


I should get back to studying. Life really isn't slowing down and I'm excited for my boyfriend Luke and I's hut trip after Christmas, and then a short trip to Aruba for my birthday! We're trying to make our own dehydrated food for the hut trip, and it's my first time officially using a dehydrator. I'll try and write a post about our successes and failures sometime soon.
